‘Food’ is usually uncountable, but can be countable when referring to specific kinds of food.

You know, it’s really taken off (=become successful) in the last few years. It used to be kind of niche (=a small, specialised field/area), but now it’s a [1] growing trend all over the world.
I think one big reason is that people are becoming more health-conscious (adj.) (=aware and take care of your health). They want to eat better, cut down on (=reduce the intake of) meat and dairy, and just feel better overall.
Also, lots of people are starting to think more about the [2] environmental impact of what they eat. I read that switching to a plant-based diet can really help reduce your [3] carbon footprint (=how much carbon your lifestyle produces), which is something I’d never considered before.
I’m not vegan myself, but I’ve tried a few [4] plant-based alternatives—like soya milk and meat-free burgers—and to be honest, they’re not bad! Some of them actually taste great.
Of course, it’s not for everyone. There are some challenges, you know, this diet, if not well planned, could lead to some [5] nutrient deficiencies (= a lack), such as lack of certain vitamins or protein, especially if you are into sports.
Also you have to give up (=stop eating) cheese and chocolate. Easier said than done! But if you want to dip your toes in (=to try something new before committing to it), even making small changes—like having a vegan meal once or twice a week—can make a difference to your health.
So yeah, whether it’s for health, animals, or the planet, I can see why it’s becoming more popular. And it seems to be more than a fad (=a passing trend), it really is [6] gaining traction in many countries. Definitely give us food for thought!
